"Copper or not"
I bought tne 18cm saucier pan on a deal as a cheaper way of trying a copper pan against the triple ply stainless steel pans that I use presently.Having now used the pan a few times I believe it does boil water as quickly as s/s using a lower gas setting. An important point given the high price of fuel and should over the years help to offset the initial pricey outlay.Its best point though, when making sauces it did not burn the butter. Something I have found easly done with s/s if you take your eye off it for one minute.

Falk Culinair's Try Me Piece was my introduction into the world of copper cookware and it wasn't my last. This a versatile piece in which I cook things like oatmeal, eggs (boiled/scrambled/fried/poached), steamed rice, pasta, bechamel-based sauces, tomato based-sauces and so on. It heats up and cools quickly giving you excellent control over whatever you cook. Soaking it after use makes it a breeze to clean. Even after I accidentally left the remnants of a bechamel on a low heat for an hour, it only took a soak to help lift off the browned sauce.

Clear website and competent administration for a "reasuringly expensive" 18 cm saucier pan. Fast delivery and safely packaged, the pan arrived as advertised and made a grand Christmas gift. We have been using tinned copper pans for many years but it is now getting hard to have them re-tinned in the UK. You can never find a tinker when you need one! The idea of a stainless steel lining was not entirely appealing but I love cooking with copper - it was a reasonable compromise. I looked at Mauviel and various other brands. The Mauviel looked good but the low maintenance copper finish on the Falk finally decided me and I have no regrets - I will report back in a few decades on durability.
