"Brilliant pan"
This is my favourite pan I own. Though a Saucier pan, I use it for everything that doesn't require a large pan from making a quick custard, boiling eggs to sauces. Heats up amazingly and holds reduces sauces in no time. Even better I left it on the hob by accident for an hour which would have ruined a normal pan but this one just keeps going as though nothing happened. Can't recommend this enough!

It is gorgeous to look at and feels great on the hand, very heavy though it is small. Have not use it yet but I can appreciate the build quality and the size must be perfect for making a soup for one or two, an egg, enough sauce for six.... I am convinced its main appeal is its truly broad functionality. Besides, it was the "try-me" product with a substantially reduced price ;-)

The saucier looks fabulous and I'm sure will look even better once it has acquired a patina that only age can bring. It's a solid thing too - you wouldn't want to upset the cook when within arm's length of a swinging pan! But the proof of the pudding (or in this case scrambled eggs) is in the eating and so, after conditioning the pan as instructed it was time to try out my favoured recipe. The impressive heat conductivity of copper was immediately obvious and with just a lowish flame it was possible to get the eggs scrambling perfectly without sticking to the base as they always did with my previous egg-pan. So, yes, the pan ticks all the boxes, as does the service from Falk Culinair. Easy to order, very professional courier delivery timed to within a 15-minute window the next day. I really can't fault anything. Is it Christmas yet? I know what's on my list - more Falk copperware!

"Copper or not"
I bought tne 18cm saucier pan on a deal as a cheaper way of trying a copper pan against the triple ply stainless steel pans that I use presently.Having now used the pan a few times I believe it does boil water as quickly as s/s using a lower gas setting. An important point given the high price of fuel and should over the years help to offset the initial pricey outlay.Its best point though, when making sauces it did not burn the butter. Something I have found easly done with s/s if you take your eye off it for one minute.
